A great pasta dish for any occasion:

Remove crab tails from shell, cut in half lengthwise and remove intestines. Toss with fish sauce, cornstarch (maize starch), juice of one lemon and sugar and toss for 15 minutes.

Chop the onion and garlic. Heat the two oils in a second frying pan or possibly in a wok and sauté the onion and garlic. Add the crab tails and stir-fry lightly throughout.

Add curry paste and pour solid coconut milk with a good 250 ml of water. Stir everything through, cook for 2 min. Taste, perhaps season with fish sauce and juice of a lemon. Mix in the chopped kitchen herbs. Cook the noodles.
