Beat the eggs with 180 g sugar in a food processor or possibly with a mixer for about 5 minutes until white. Melt the cooking chocolate in a bain-marie and stir with a whisk with 125 g of softened butter until smooth.

Then fold in 1/3 of the egg-sugar mixture at the beginning and then stir through with the rest.

Sift flour and cocoa powder onto a sheet of paper and stir into the batter as well. Remove the peel from the bananas and form one (or 1/3 of a normal sized banana) in each fireproof ramekin. Cover with the chocolate mixture and bake for 10 min at 180 °C in the oven.

In the meantime, cut the remaining bananas crosswise into slices just under a centimeter thick. Halve the passion fruit, whisk with a magic wand and spread through a sieve. Bring to the boil together with 50 g of sugar and cook a little. Finally, thicken the fruit sauce with pieces of ice-cold butter and toss the banana pieces briefly in it.

Alternatively, you can also boil a quarter of a liter of passion fruit juice to 100 ml and bind it with butter. The sugar should then be completely omitted and instead add a squeeze of juice from a lemon.

Serve the chocolate bananas in a ramekin on a plate together with the glazed fruit. If you like, you can also add a scoop of passion fruit sorbet or chocolate ice cream.
