Meanwhile, steam the snow peas and onion in butter, stirring throughout, for 10 to 15 min. Add garlic, stir and serve: Sprinkle parsley on top.

It does not have to be onion and garlic: kefen also taste very good naturally !

Kefe is a very delicate vegetable, a ‘royal’ vegetable.

Kefe is also called pigeon pea, sugar snap pea, mangetout or sugar snap pea: as its French name ‘mangetout’ – ‘eats all together’ – suggests, kefen are not shelled, but eaten whole.

Harvest time: late June to early July.

Prepare: Chop stem and tip into small pieces; unthread large snow peas.

Preparation: steam, if possible, so as not to spoil the flavor of the tender snow peas.
