Instructions:

For the punch cookies, mix all ingredients. Knead well first with a food processor and then with your hands. Let dough rest in a cool place. Roll out the dough thinly and cut out cookies.

Bake at approx. 170 °C for approx. 8 min until light and let cool. For the filling, crumble the sponge cake and mix with the remaining ingredients until a creamy mixture is formed.

Assemble the cookies with the filling and coat with punch icing.
