(*) Melanzane puree with sesame oil paste Crush the garlic cloves with a little bit of salt and put them in a large enough bowl. Add sesame oil paste, cumin, and juice of one lemon and stir well.
If possible, bake the melanzani on a broiler or cover well with aluminum foil and cook in a heated oven ( 200 degrees ) for about 25 minutes.
Scrape off the skin and chop the melanzani with a fork. Add the finished sauce, whisk and season. Garnish with parsley, olives, tomato pieces and olive oil. If possible, add pomegranate seeds.
