Instructions:

Butter and sugar the molds.

Boil the milk with the orange peel. Stir the corn powder with half of the sugar, yolks (1) and salt. Mix into the milk and make until it is thickened. Remove from heat and fold in the yolks (2) and flour. Let it boil again while stirring. Add the Campari and allow to cool a little. Whip the egg whites and the remaining sugar to egg whites. Mix into the mixture and pour into the molds.

Bake in a heated oven at 200 °C in a bain-marie for twenty-five to thirty minutes.

Boil the orange juice with the peel, sugar and liqueur by half and strain.

Turn out the casseroles and serve them with the sauce and lemon balm.
