For the clear chicken soup, first wash the meat under running water. Then put it in a large pot and pour 2 liters of water, add the peppercorns, bay leaves and salt and pepper.

Bring the water to boil with the ingredients and in the meantime peel the celeriac and carrots. Cut the celeriac into larger pieces and add the carrots whole to the pot. Now simmer the whole thing for at least an hour.
