Instructions:

For the duck with red wine pears, first peel, halve and core the pears. Bring the remaining ingredients to the boil and simmer the pears gently for about 10 minutes. Allow to cool.

Score the duck breasts crosswise on the skin side and sear for about 10 minutes, skin side down. Empty the rendered fat from the pan and sear the other side for another 5-10 minutes. Season with salt and pepper and let rest for 5 minutes.

Meanwhile, boil the orange juice and zest with the sugar and vanilla bean to make a syrup. Add port and duck stock and continue to simmer briefly. Pour through a sieve. Mix the cornstarch with a little water and thicken the sauce with it while bringing to the boil again.

Before serving, stir the butter into the sauce and slice the duck breasts.

Arrange the duck with red wine pears and sauce and serve.
