For the egg white cake, preheat the oven to 170°C. Grease a loaf pan with butter and sprinkle with breadcrumbs. Beat the egg whites until stiff. Soften cooking chocolate for the dough in a bain-marie and let it cool a bit.
Cream butter with sugar. Add the chocolate. Mix flour with baking powder and fold in alternately with snow. Pour the dough into the prepared pan. Bake at 170°C for about 35 minutes. Test with a needle!
Spread the egg white cake with jam.
For the glaze: boil the cooking chocolate with the whipped cream 1 time and cover the cake with it.
