Instructions:

For the elderberry punch, first prepare the elderberry juice: To do this, boil elderberries with a little water until soft and pour through a muslin cloth. Add honey, boil repeatedly and pour hot into small, hot rinsed bottles and seal immediately.

For the punch, halve hazelnuts, soak raisins in elderberry and apple juice for 4-8 hrs.

Squeeze orange juice, cut the peel of half an orange into fine strips. Pour the boiling water over the fruit tea, orange peel, cinnamon stick, star anise and cloves, leave to infuse for 10 minutes, strain and heat with the juice, hazelnuts and the raisins.

Add lemon juice, orange juice, rum and honey and serve the elderberry punch hot!

Elderberry punch also tastes good chilled in summer!
