Clean the mushrooms and quarter them. Rinse the basil. Set aside a few leaves for dressing, cut the rest into strips.

Crush red peppercorns in a mortar. Heat clarified butter in a frying pan. Roast steaks in it for 2 min on each side. Remove and season with salt and coarsely crushed black pepper on both sides. Place on warmed plates and keep warm.

Sauté the mushrooms in the frying fat and remove. Sprinkle with basil. Deglaze the roast stock with the brandy. Mix in crÂme fraÂche and cook a little. Add green and red peppercorns to the sauce form. Season with salt. Arrange steaks with mushrooms, sauce and enough basil leaves.
