For the parsnip soup, finely slice the carrot and bring to the boil briefly in a pot of water. Remove carrots with a ladle and set aside.

Wash and dice parsnips, then bring to a boil in carrot water and cook until al dente. Add whipping cream and puree the soup.

Add half of the carrots and season the hot soup with salt, pepper and lemon juice.

Wash and chop the parsley and serve the parsnip soup sprinkled with a few sticks of carrots and parsley.

Preparation Tip:

Serve with a slice of bread with the parsnip soup.
