For the wild mushroom dip, first heat 1 tablespoon of olive oil in a heavy bowl over moderate heat and sauté the onion until soft, but do not let it brown.

Add the rest of the oil, the garlic and the melanzani and steam for 10 minutes with the lid closed. Add the mushrooms and cook without the lid for another 15 minutes.

Add the herbs and vinegar and season with salt and pepper. Allow the wild mushroom dip to cool.
