Instructions:

For the wraps with spinach filling, mix cornmeal, flour, 1 tsp. salt and parsley with 150 ml warm water. Cover and let rest for about 20 minutes.

Wash spinach, sort and drop together in lightly boiling water. Drain, rinse and drain. Squeeze spinach, chop and mix with garlic, crème fraîche, salt and pepper.

Preheat the oven to 200 degrees (convection oven 180 degrees ). Divide the dough into 8 portions and roll out on a floured surface into thin patties (0 15 cm).

Bake in a non-stick frying pan without fat for about 1 minute on each side. Remove.

Top each tortilla with a slice of gorgonzola, spinach and toasted pine nuts and roll up. Bake in preheated oven for about 10 minutes.

Cut due wraps with spinach filling once as desired and serve garnished with fresh herbs.

Preparation Tip:

If you want to do it quickly, you can prepare the wraps with spinach filling with ready-made patties from the supermarket or you can make the patties the day before.
